Crispy Kale Salad

This is the BEST way to eat kale!
A dressing of lemon, garlic and Parmesan cheese transforms kale ...
1 large bunch Eden Gardens kale (about 8 ounces)
1 very small or 1/2 medium garlic clove
1/4 teaspoon kosher salt
3 tablespoons olive oil
1 lemon (3 to 4 tablespoons juice, plus zest)
2 tablespoons of Parmesan cheese
PUTTING IT ALL TOGETHER
Rinse and spin kale and place in large bowl
Thinly slice garlic and set aside
Combine 3 tblsp olive oil, 1/4 tsp kosher salt, lemon juice, zest in small bowl
Pour dressing over kale while tossing
Add garlic slices and sprinkle Parmesan
